- 8 bone-in chicken thighs
- salt and ground black pepper to taste
- 3 tablespoons olive oil
- 2 green bell peppers, sliced into strips
- 4 cloves garlic, coarsely chopped
- 1 cup balsamic vinegar
- 2 cups chicken broth
- 2 tablespoons honey
- 1 tablespoon tomato paste
- 1/2 cup chopped scallions

- Pat chicken thighs dry with a paper towel and coat with salt and pepper.
